Tomato Sauce

Yield: 4 - 1/4 cup Servings

Ingredients:

  • 1 tbsp olive oil
  • half onion, chopped
  • 4 garlic cloves, crushed
  • 2 tbsp tomato paste
  • 1 28oz. can crushed tomatoes with the juice or 1 ¾ pound of fresh tomatoes, peeled, seeded and diced
  • 1 tbsp brown sugar
  • ½ tsp dried oregano
  • 2 dry bay leaves
  • Salt and pepper
  • 1 tbsp chopped fresh basil

Directions:

  1. Cook onions in olive oil.
  2. Add garlic and sauté.
  3. Add tomato paste, crushed tomatoes, sugar, dried oregano, bay leaves, salt and pepper.
  4. Cover and bring to a low simmer for 25-30 minutes.
  5. Remove from heat, add fresh basil.
  6. Remove bay leaves.
